Wooo lunch got a little heated today, haha but it was GOOD! After studying for a bit, I decided that before I headed to the gym I wanted to make a lunch that I do not get to enjoy very often due to on-campus residency: OMELETTE! So, we were out of roasted red peppers, but after scavenging through the pantry for a bit I found a jar of sliced mushrooms. My omelette consisted of two egg whites + one whole egg, tomato, sliced mushrooms, and laughing cow cheese. YUM!

I decided that making omelets is my new favorite pasttime, haha it seriously is fun and it makes me feel like a gourmet chef. While waiting for it to set, I started feeling a little ancy/creative and decided to sprinkle some crushed red pepper flakes and paprika into the thing. Alond with the "zesty" guac I spread on it-bring on the heat! To kill the fire, I had some Honey Sesame Kashi crackers and baby carrots on the side:

And finished off lunch with this wonderful Fuji apple:

I waited for lunch to settle, and then headed over to the gym, where I bumped into a friend who ended up spinning with me for a good 45 minutes or so. Fun times. I did my usual weight circuit after, then headed home to see what mess my parents have made of our house, since the boy is coming for steaks tonight. My mom was running around like a fool, and my dad is meticulously cleaning the patio, man they know how to freak a girl out! haha oh well, I think it will be fun...I hope.

I made a post-workout snack of a pb & j pita:

Just a defrosted Joseph's wheat and flax pita with smooth pb and another find from my pantry scavenge: Polander's "all fruit" black cherry jelly. It has definitely be AWHILE since I've had an actual peanut butter & jelly and I'd have to say this did not disappoint. I'm already looking forward to some steaks off the grill tonight though...
